Oriental Crab Rice





1.1 lbs        fresh mud crab,
(3pcs)         cleaned very well
6 cups        WATER
2 slices       GINGER, crushed
1/4 cup      OIL
1 tbsp        GARLIC, crushed
1 tbsp        grater GINGER
1 pc           ONION, sliced
4 pcs          SHIITAKE MUSHROOMS,
                  cut into quarters
1/2 cup      UNCOOKED GLUTINOUS RICE
1 cup         UNCOOKED RICE
1 tsp          SESAME OIL (optional)
5 tbsp        OYSTER SAUCE
1 tbsp        SPRING ONIONS,  
                  chopped





1      In a saucepan, combine ginger and water and cook over high heat until it 
       starts to boil. Add the crabs and cook for another 10 minutes.

2     Remove the crabs and cut into serving pieces.

3     Measure 5 1/2 cups of the crab stock and set aside.

4      Sauté garlic, onion, ginger, and mushrooms in oil. Add the uncooked rice 
       and glutinous rice. Stir-fry for one minute.

5     Add the stock, sesame oil, crabs and oyster sauce. Mix well. Cook over 
       high heat until it starts to boil.

6     Lower the heat and stir to prevent the rice from sticking to the bottom of 
       the pan. cover and cook until rice is tender. Garnish with chopped spring
       onions.
