Oriental Vegetable Stir-Fry


                                                                                                           INGREDIENTS

makes 5-6 servings

1 tbsp       COOKING OIL
1/2           crushed GINGER
3 cloves    GARLIC, crushed
8-10 pcs    MUSHROOMS (shitake     
                or button), cut into      
                quarters
1 pc          BROCCOLI, cut into  
                pieces and blanched
3 tbsp       OYSTER SAUCE
1 tbsp       CORNSTARCH,
                dissolved in:
1/4           WATER
1 pack       SOFT TOFU, cut into 1/2 cubes

DIRECTIONS

1     In a heated wok, sauté ginger and garlic.

2     Add the mushrooms and stir-fry over high heat for about three minutes until cooked.

3     Add the broccoli and oyster sauce. Stir-fry for another 30 seconds.

4     Add the dissolved cornstarch, and continue cooking until the sauce thickens.

5     Add the soft tofu and cook for another minute before serving.
