Beef with Oyster Sauce


                                                                              
INGREDIENTS
makes 4 servings
  
9 oz            BEEF SIRLOIN,                       
                  pounded with
                  back of the knife
                  &cut into strips  
                  SALT to taste
                  PEPPER to taste
1 tbsp         CORNSTARCH
3 tbsp         COOKING OIL
3 cloves      GARLIC,crushed
1 1/2 tps     crushed GINGER
1 pc            ONION, sliced
3/4 cup       WATER
1/4 cup       OYSTER SAUCE
1 tsp           GIN
1 tbsp         SUGAR
3 cups         SNOW PEAS
1 tsp           CORNSTARCH, dissolved in:
1 tsp           WATER
1 tsp           SESAME OIL(optional) 

DIRECTIONS    

1     Season beef with salt and pepper. Coat with cornstarch.

2     In a pan, heat oil. Fry the beef until the edges turn brown. Drain and set aside.

3     In the same pan, sauté garlic, ginger and onion.

4     Add the pre-friend beef and the water.

5     Over high heat, add the oyster sauce, gin, sugar and snow peas.

6     Thicken the sauce by adding the mixture of cornstarch and water.

7     Just before removing from heat, add sesame oil. Serve hot.
