Vegan Mushroom Potstickers

Makes 30 potstickers

Ingredients:

10 dried shiitake mushrooms

1 cup hot water

1 pound wild or button mushrooms, chopped

1 cup loosely packed shredded cabbage

1 bunch green onions, chopped (green and white parts)

4 garlic cloves, minced

2 tablespoons freshly grated ginger

1/4 cup tamari sauce

2 tablespoons toasted sesame oil

Pinch of sugar or more to taste

Sushi Rice

Ingredients:

makes 5 servings

3 cups short-grain calrose rice
4 inches piece konbu
3 1/2 cups water


Shari

3 tablespoons sugar
1 1/2 teaspoons salt
4 1/2 tablespoons japanese vinegar

Directions

1.     Wash and drain rice for 30 minutes.

2.     Place rice, water and Konnbu in Electric Rice cooker and cook.

3.     When cooking period is over, let it rest in the rice cooker for 5 minutes, 

        without opening.

5.      Take rice, transfer to wooden hanigiri (or bowl, if you don't have one, 

         but results will not be as satisfying) and sprinkle shari onto the rice.

6.      Using a rice paddle, mix and toss the sushi rice in a side way cutting 

         motion. As you do this, get someone to use a hand fan and fan your 

         rice. Keep on mixing for around 10 minutes. Cover the Hanigiri or your 

         bowl with a damp cloth as you get your other ingredients for sushi 

         ready.

Chinese Lemon Chicken

INGREDIENTS

makes 3 servings

1 1/4 lbs chicken breasts, cut into 

   bite-size pieces
1 egg (beaten)
1 tablespoon cornstarch
2 tablespoons soy sauce

Sauce

1/2 cup sugar
2 teaspoons chicken bouillon granules
1/2 teaspoon garlic powder
2 tablespoons cornstarch
1 cup water
1/2 cup lemon juice (I use more)
2 tablespoons ketchup

   cornstarch, for dipping
   vegetable oil (for frying)

Directions

1. Mix together the egg, 1T cornstarch and soy sauce.
2. Place in a gallon size ziplock with the chicken and allow to marinade 10 minutes or more.
3. Heat oil in pan -- while it is heating dip each piece in additional cornstarch and place in frypan cooking till done and golden brown.
4. Sauce:.
5. Mix first 4 sauce ingredients in a sauce pan.
6. Add water, juice, and ketchup whisking to prevent lumps.
7. Cook till thick and clear and serve with chicken over rice or use as dipping sauce and "chicken nuggets".
8. Cook time is approximate. Serve hot.

“She’s my heart,” he said.

Heart has never been an issue for these two.

What’s always been lacking is a kidney. Jimmie Sue was born with only one, and now that one is shot. She needs a transplant but neither her husband, nor anyone tested in her family, is a suitable match.

Jimmie Sue is on a donor list, but the wait is about two or three years long and that’s for a kidney from a deceased donor. Transplant patients who get their kidneys from living donors tend to live longer.

Which is why Larry decided to try a completely radical approach to securing a kidney: asking for it, from total strangers.

“I don’t care what people think,” Larry said. He tells his wife, “I’m going to get you a kidney.”

Never mind that most people won’t give panhandlers their pocket change, let alone their vital organs. A few months ago, Larry, at 77, has been walking all over his hometown of Anderson, S.C. and the surrounding towns basically begging for a kidney.

And on out on the street, wearing a signboard — “Need kidney 4 wife” — he’s not shy in asking passersby: “I sure could use your kidney.”

The inventor of GAME BOY was originally nintendo's janitor and maintenance man!!

Gunpei Yokoi, a name that is unfamiliar to you, yet his inventions have shaped your childhood. Yokoi was the inventor of the Game Boy, and the D-pad. The D-pad, for those of you that don't know, is the pad of directional buttons on almost all handheld consoles, as well as video game controllers.

Before inventing one of the most important pieces of video game technology, Yokoi was a janitor for Nintendo, and was often told to fix the machines in a factory when they were acting up. On his free time, Yokoi would tinker on toys of his own that he could use when there wasn't anything to do at work. He spent his time doing productive things, while most of us just play solitaire on the computer when we have nothing to do at work.

By chance, in 1966, the president of Nintendo, Hiroshi Yamauchi was walking through the factory that Yokoi worked and noticed in the corner of his eye one of Yokoi's inventions. The president ordered Yokoi to design, and make more toys in order to keep up with the demand of the Christmas rush!

Yokoi was quickly promoted through the Nintendo ranks, and soon found himself in charge of making one of the most iconic characters have superhuman abilities. That's right, not only did Yokoi invent the Game Boy, he came up with Mario's abilities, and suggested to Mario Bros. creator Shigeru Miyamoto that they introduce Mario's brother, Luigi.
